As a little girl, I remember my mom always saving our overly ripe bananas – sometimes almost black – and making the most delicious banana bread. Over the years, I’ve tried to turn her delicious tasting bread into a healthier version. Since it is common knowledge that not only gluten, but many grains are causing not only weight gain issues but significant inflammation in our bodies – I wanted to create a tasty bread that actually nourished our bodies. This recipe is the result of many experiments and I have to say it comes very close in taste to my mom’s original but it is all natural, healthy, and fully grain free. We hope you love it as much as we do! And, we have two special “tasters” at the end of our video – our husbands! Enjoy.
Danna’s Healthy & Grain Free Banana Bread
- ¼ Cup Coconut Oil
- ½ Cup Organic Raw Honey or Organic Maple Syrup
- 2 Eggs
- ½ teaspoon Vanilla
- 1 ½ Cups Mashed Ripe Bananas
- 1 1/4 Cup Cassava Flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
- ½ Cup Pecans or Walnuts (Optional)
- ¼ Cup Semisweet Chocolate Chips (Optional)
Pre-heat oven to 375 degrees.
Combine oil, honey or maple syrup, eggs and vanilla until creamy. Stir in mashed bananas. Add dry ingredients to mixture and mix well. Pour into a greased loaf pan. I recommend placing parchment paper at the bottom of the loaf pan so the bread slips right out. Bake at 375 degrees for 45 – 50 minutes.
